The Best Instant-Read Meat Thermometer

A fast thermometer is the cheapest upgrade to everything you cook. We use a Thermapen, and it has paid for itself on cuts we did not want to ruin.

Our pick: ThermoWorks Thermapen ONE

This is the one we own. It reads in about a second and holds accuracy to half a degree, and the probe folds away. It costs more than a basic thermometer. It is worth it: ours gets used most days and has held up for years.

Budget pick: ThermoPro TP19H

If the Thermapen is more than you want to spend, the ThermoPro TP19H is accurate and sturdy. It takes five to eight seconds to lock in instead of one. For most cooks that is fine.

What to look for

  • Speed under three seconds.
  • Accuracy of 1°F or better.
  • A waterproof rating so it survives real kitchen use.

Why it matters

Lean cuts go from right to overdone in a few degrees. A fast read is what makes our sous vide and reverse-sear cooks repeatable, and it settles any “is it done” question in a second.

FAQ

Is the Thermapen ONE worth it?

If you cook meat often, yes. The one-second reads and durability make it the last thermometer most people buy. If you cook now and then, the ThermoPro TP19H is a strong value pick.

What temperature should I pull my steak?

For medium-rare, pull beef around 130 to 133°F and rest it. Our sous vide guide has full charts by cut.
