How to cook goat shoulder

Low and slow, always. Season hard, sear for color, then braise in a covered pot with chilies, aromatics, and enough liquid to come halfway up. Three to four hours at a bare simmer, or 300F in the oven, breaks the collagen into silk. Shred the meat and reduce the braising liquid into a sauce.

Why it beats leaner cuts here

The connective tissue that makes shoulder tough when fast-cooked is exactly what gives a braise body and a glossy sauce. Leaner cuts like loin cannot do that.
