Grilled Lamb Loin Chops

Lamb loin chops are the little T-bones of lamb — tender, quick, and weeknight-friendly. A simple garlic-herb marinade and a hot grill are all they need.

Ingredients

  • 8 lamb loin chops
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp chopped rosemary
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Juice of 1 lemon

Instructions

  1. Whisk the oil, garlic, rosemary, salt, pepper, and lemon juice; marinate the chops 30 minutes.
  2. Heat the grill to high.
  3. Grill 3–4 minutes per side to 130°F for medium-rare.
  4. Rest 5 minutes before serving.

Tips

Do not overcook — loin chops are lean and best at medium-rare.
