Grilled Lamb Loin Chops
Lamb loin chops are the little T-bones of lamb — tender, quick, and weeknight-friendly. A simple garlic-herb marinade and a hot grill are all they need.
Ingredients
- 8 lamb loin chops
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp chopped rosemary
- 1 tsp kosher salt
- 1/2 tsp black pepper
- Juice of 1 lemon
Instructions
- Whisk the oil, garlic, rosemary, salt, pepper, and lemon juice; marinate the chops 30 minutes.
- Heat the grill to high.
- Grill 3–4 minutes per side to 130°F for medium-rare.
- Rest 5 minutes before serving.
Tips
Do not overcook — loin chops are lean and best at medium-rare.
